Are you guys ready for a game changer? Because this is it. This cheese is great for my paleo pals or my vegan lovers because it is plant-based, low in calories, loaded with nutrients, and high in plant protein-plus lots of b-vitamins! YAY.
Seriously, I was so excited to make this recipe and even more excited with how it turned out. The fact that it is loaded with so many amazing ingredients makes it even more exciting. As an active girl who always needs more protein and b vitamins to recover- this cheese may need to become a staple!
I even tried swapping the cashews for the brazil nuts in the recipe for added selenium, (which is great for thyroid healthy) and still absolutely loved the flavor.
If you can’t tell by now, I used this to make some paleo nachos and it was BOMB. I’ll explain what else I added, but it’s all pretty simple. Just look at how beautiful dis food is though!
I used Siete foods tortillas and toasted them until they were crispy like chips! I topped them with some barbacoa beef, salsa, fresh tomatoes and cilantro, an avocado rose, and this NACHO CHEESE. If you’re not feeling the avocado rose then some creamy guac would be perfection layered in too. I’m just currently obsessed with the avocado rose as of late. - 2 cups steamed carrots
- ½ cup soaked cashews
- ⅓ cup nutritional yeast
- 1 tsp sea salt
- ¼ cup organice salsa
- Soak cashews overnight.
- Steam carrots
- Blend carrots, cashews, nutritional yeast, and sea salt until smooth and creamy.
- Mix in salsa...and ENJOY!
