
I’m a big fan of simple bowls that pack a lot of flavor! They are quick to put together, you can easily change the flavors, and they are full of nutrients. I teamed up with Blue Circle Foods to create these delicious ‘sushi bowls,’ with their Happy Fish!
I love this take on sushi bowls for the fall/winter because they are warm, grounding, full of minerals, and have a balance of protein, carbohydrates, and fats! Plus with the cute Happy Fish, they are super fun for the kid in us all… Just look at that cute fishy shape!

You can also cook these tasty frozen fish straight from the freezer in 4 minutes. Perfect for tossing onto these sushi bowls or for eating alone as finger food!

How to cook Happy Fish (MUST be cooked from frozen. DO NOT thaw.)
- Sauté: Heat pan with oil. Cook Happy Fish for 2 minutes on each side.
- Grill for 2 minutes on each side.
- Poach: Add to boiling water for 5 minutes.

Quick Pickled Asian Carrots
Ingredients
3 cups shredded carrots
1/2 cup rice vinegar
1/2 cup apple cider vinega
2 T monk fruit sweetener OR coconut sugar
2 T himalayan pink sea salt
2 T sesame seed oil
Instructions
Shred carrots using a grater or mandolin.
Combine all other ingredients and whisk together.
Heat on the stove until boiling, then remove from heat and add in carrots.
Once the mixture has cooled slightly, add to a glass jar and store in the refrigerator.
Asian Green Goddess Dressing
Ingredients
1/4 cup tahini
2 T ume plum vinegar
2 T sesame seed oil
2 T (or more) water, to thin
1 green onion
1 clove garlic
handful of cilantro
pinch sea salt
Instructions
Blend all ingredients together until smooth and creamy!
Sushi Bowls with Happy Fish from Blue Circle Foods
Ingredients
Rice, cooked (I prefer white!)
Riced broccoli or cauliflower
Happy Fish, cooked to instructions above
Asian Green Goddess Dressing, recipe above
Wakame, soaked
Avocado
Quick pickled asian carrots, recipe above
Green onions, chopped
Cilantro, chopped
Black sesame seeds
Instructions
Load a bowl with a mixture of rice and riced veggies, or choose just one!
Top with your favorite ingredients! I love them all, but pick the ones that you love.
Drizzle with Asian Green Goddess dressing, black sesame seeds, and enjoy!
