It’s fall and people are obsessing over all things pumpkin spice…especially with Thanksgiving coming up next week. Pumpkin pie say whatttt. I couldn’t stay away from the trend, so I had to make this delicious Pumpkin Pie Chia Seed Pudding!
If you’ve been following along for a while, you know that I love chia seeds for so many reasons and think they are an awesome snack or breakfast choice. You can read all about there amazing benefits on my pantry staples page! I love Salba Chia seeds for their quality and consistency. Chia seed pudding is one of my favorite ways to enjoy chia seeds and this is a fun way to spice them up and add some grounding qualities for fall!
This recipe is loaded with blood sugar balancing goodness! It has healthy fats from chia seeds and coconut, with nutrient dense carbohydrates from pumpkin, and an amazing source of protein from collagen. So, go ahead, get your basic bitch on and start enjoying this treat for breakfasts and snacks! Oh, and if you are looking for my favorite brand of collagen, you can find that here. - 1 cup organic pumpkin puree, canned
- 1 cup water
- ¼ cup chia seeds
- 2 scoops collagen protein
- 1 tsp pumpkin pie spice
- 1 tsp vanilla extract
- salt to taste
- stevia to taste
- coconut cream to top with!
- Heat all ingredients together in a pan until the chia seeds have expanded and it's nice and creamy. Plop in a bowl and top with coconut cream!
