So it’s Cinco de Mayo and what better way to celebrate than with delicious foods that you can share with your favorite peeps! This Pineapple Mango Salsa is so delicious and adds a great twist to any fiesta you may be throwing. Not only that, but this recipe makes a ton, so there is plenty to share…and have for leftovers!
I love that this makes a lot of salsa because it is great on fish, chicken, tacos, salads, and pretty much anything. Meaning, you’ll definitely want leftovers, especially since it only gets even more flavorful as it marinades over time.
Not only is this full of flavor, but it is loaded with amazing ingredients that are especially high in vitamin C!
Pineapple Mango Salsa Ingredient Spotlight
Pineapple is loaded with vitamin C and manganese, plus bromelain, which is known for its beneficial enzymes. However, it is also great for reducing inflammation as well as improving digestive function.
Mango is another delicious tropical fruit that is wonderful for your health. It has anti-cancer properties, improves immune function (high levels of vitamin C), lowers cholesterol, clears skin, and is very alkalizing to the body.
Red onions like garlic are a great anti-fungal and anti-bacterial food, mostly due to the high allicin content. Allicin also promotes cardiovascular health, treats cancer, and reduces high blood pressure. They also are high in quercetin, a bioflavanoid that is especially important for fighting free-radicals, making it a potent antioxidant food. Quercetin is also cancer fighting, anti-inflammatory, anti-fungal, and anti-inflammatory.
