Hello hello! I am so excited to be bringing you this super refreshing summer popsicle recipe! After a serious heat wave hitting Colorado, I wanted to make all of the cold things that were healthy and could be eaten as a snack or dessert. We don’t have air conditioning, so we were chilling inside at 90 degrees, woof. Anyways, the insane heat lent to some delicious creativity that we get to reap the benefits from now!
These Pina Colada Popsicles are so freaking easy to make it is ridiculous! There is no need for added sugar or bullshit, but plenty of room for flavor!
I added in some chia pudding for some extra fiber and to give a fun look. I also enjoyed topping the popsicles with dark chocolate and bee pollen for some beautiful decoration once I popped them out of their molds, but these things are completely optional.
Okay, okay, on to the easiest popsicle recipe you’re every going to make!
- 2 cups chopped pineapple
- 1 can full fat coconut milk
- pinch sea salt
- Blend all ingredients and pour into popsicle molds!
