Hi February! We love you because you are an excuse to make beautiful, healthy, and paleo chocolates…and eat them!
You may have noticed that I love making delicious chocolates, especially healthy ones with some medicinal properties. Well, these are no different. One of my favorite blogs is Nutrition Stripped and I just had to try the recipe that she had created for 4 ingredient chili chocolate truffles…and make them my own!
These are seriously melt in your mouth heaven. The texture and flavor are so out of this world that you feel like you are eating rich chocolatey cheesecake or some seriously decadent truffle. Well you are eating a decadent truffle, but this one is full of beneficial fatty acids, liver support, and immune support!
I switched this recipe up by adding in carob and dandelion root powder. Mckel uses maca, which is also an exceptional choice (plus the flavor is delicious with chocolate!). So what are the benefits?
Dandelion root is an exceptional for improving liver function and digestion, which mean it is excellent for detoxification and removing toxins. It is also extremely beneficial for the kidneys and gallbladder, plus it is excellent for reducing inflammation. Studies also show that it boosts the immune system, which is probably due to it’s high levels of antioxidants and vitamin C.
Carob is one of my FAVORITE treats. Carob is naturally sweet and satisfying with a somewhat chocolatey flavor without the bitterness. Plus carob is loaded with fiber and antioxidant polyphenols. It is also said to improve digestion and lower cholesterol!
Cacao (Chocolate) has been demonized and then praised for its many health benefits. It is a powerful antioxidant, is extremely rich in minerals, especially Magnesium, has high levels of B vitamins, and is a rich source of powerful antioxidants (polyphenols). My only issue with chocolate is the high levels of caffeine which can be hard on the liver and adrenals for some people. That is why I paired it with dandelion root! Remember, balance with everything! 🙂
Coconut is amazing. It is loaded with healthy MCT’s and saturated fats that are touted for their fat-burning properties as well as being an awesome source of energy! I love that this recipe uses coconut milk for a rich taste and for all of the beneficial properties that coconut provides. Read more here.
- 1 can full fat coconut milk (use all but ¼ cup clear liquid at the bottom!)
- 5 oz dark chocolate (I like to use 80%)
- ¼ cup carob powder
- 2 tbsp dandelion root powder (optional)
- ¼ tsp cayenne pepper
- Melt chocolate and coconut milk in a double broiler, mixing together.
- Add carob, dandelion, salt, and cayenne to the mixture.
- Mix thoroughly and then place bowl in the refrigerator until it has hardened enough to roll into balls.
- Roll into balls and cover in carob powder
