Happy Cinco de Mayo!! Are these not the most beautiful tacos you have EVER seen? Seriously though, this is why I love plant-based diets and eating a variety of plant foods. The flavors, colors, and textures that you are able to find in plants is what makes a whole foods diet so amazing. Who needs shitty processed foods when you can have all this!This contains no meat, grains, nuts, seeds, dairy and is absolutely delicious! I like to think of every meal starting with this type of base and then adding your animal products from there. Normally, I would also add animal protein to this as well if I felt like I needed it, but it is still plant-based!
I used a few recipes to create these cinco de mayo inspired tacos, so that everyone could make theirs to their specific tastes and liking! The shell is a steamed cabbage leaf, but you could also use romaine lettuce, a collard leaf, or a taco shell if that is your thing! I recommend making these recipes to give people options:
Roasted Vegetables (green peppers, red peppers, onions)
Sweet Potato Hash (add beans to this for some vegan protein!)
Protein: Crockpot chicken (simply place frozen chicken breasts in a crock pot on low with salsa all day-then shred when you get home!)
