This Low Glycemic Berry Smoothie is paleo, AIP, whole 30, and loaded with healthy fats and protein to balance your blood sugar and keep you full and happy! Many people think that smoothies are a healthy meal replacement, but don’t know how to make their smoothie work with their body! Health fats and protein are extremely important since they digest slower and thus keep your blood sugar balanced! This smoothie has a few extra components that make it even better!
The first is collagen protein. Collagen is amazing for the health of your gut, skin, hair, nails, and skin, beautifying you from the inside out. It is also an easily digestible source of protein, so it is a fantastic choice! I used Tonic Product collagen, which you can find here.
This smoothie is also packed with a vegetable with anti-cancer properties and tons of fiber, cauliflower! Cauliflower is nutritionally dense, thickens smoothies, and is easy to add to smoothies without changing the flavor! You can buy frozen cauliflower or you can steam cauliflower and then freeze to make it even easier to digest.
I love adding fresh mint to this smoothie, especially in the summer for its cooling properties, but get creative and make it your own! Kiwi is another great fruit to add in and you can also increase the vegetable content by adding in spinach!
- 2 T tonic collagen
- ¾ cup berries
- 1 cup frozen cauliflower
- ½ avocado
- water or 'milk' to desired thickness, about 1 cup
- optional:
- fresh mint
- Blend all ingredients together until thick and delicious!
- You can blend without berries first, pour half and then blend with berries if you want to create layers!
