This is one of the most healing and beautiful soups you can possibly consume. Not only is it made from local and seasonal ingredients, but the ingredients are full of immune boosting benefits! Bone broth is one of the most nourishing and healthy foods that you can consume. Plus, it is definitely a way to to show your appreciation for an animal giving its life by using every piece of it (sorry if that grosses you out!). You can read more about the benefits of healing bone broth here and learn how to make it! This was also a mineral rich broth as I added seaweed to it for even more spectacular nutrition.
Ingredient Spotlight:
Seaweeds are super important because they have the highest source of minerals of any food, especially considering the fact that our soils are becoming more and more depleted of minerals, thus making food more and more depleted of minerals.
Bone broth is packed with amino acids, calcium, minerals, and is what I would definitely call a superfood!
We then used pumpkin to aid in beta-carotene and vitamin C to even further boost your immunity…plus it’s in season right now, thus #sustainabilitysunday!!
The garlic also adds another element of immune boosting properties.
Ingredients:
- 2 cups bone broth
- 1.5 cups cooked pumpkin
- 3 cloves roasted (or raw) garlic
- 1 tsp himalayan pink sea salt
- 1 tsp cinnamon
- 1 tsp chili powder
- 1/4 tsp cumin
- optional: sautéed kale, pasture-raised chicken, grass fed sausage….
Directions:
- Blend all ingredients!
- Add in sautéed kale, pasture-raised chicken, or whatever else your hearts desires!!
- We definitely recommend topping it with lots of hot sauce…yum!
