Paleo Curry Chicken Salad
  • 3 chicken breasts
  • ¼ cup mayonnaise, I like Primal Kitchen Foods
  • 2 tsp curry powder
  • 2 tsp honey
  • juice of ½ lemon
  • ½ cup slivered almonds
  • ½ cup chopped celery
  • ½ cup purple cabbage
  • ¼ cup chopped green apple
  • salt and pepper to taste
  1. Bake chicken- you can use any part of the chicken. I actually love using a mix of meat to add a more tender meat from the thighs.
  2. Combine mayonnaise, lemon, honey, curry powder, slat, and pepper.
  3. Mix with remaining ingredients, refrigerate, and enjoy!
I also love subbing apple and cabbage for raisins or currants and almonds for cashews.
