Healthy Vegan Cookie Dough
  • 1 can chickpeas (I like Eden Organics for digestibility)
  • 1 cup shredded coconut
  • ½ cup oats
  • 3 tbsps ghee (or coconut oil or peanut butter)
  • ⅓ cup maple syrup (adjust to your liking)
  • ⅓ cup water
  • 2 scoops vanilla protein powder
  • ¼ cup cacao nibs or chocolate chips
  • We like to add salt for a salty sweet dessert, so add to your liking :)
  1. Blend all ingredients together besides chocolate chips until smooth.
  2. Then mix in cacao nibs/ chocolate chips.
  3. Place on parchment paper or plastic wrap and roll into cookie dough!
  4. Store in freezer to last longer:)
