Healthy Vegan Cookie Dough
- 1 can chickpeas (I like Eden Organics for digestibility)
- 1 cup shredded coconut
- ½ cup oats
- 3 tbsps ghee (or coconut oil or peanut butter)
- ⅓ cup maple syrup (adjust to your liking)
- ⅓ cup water
- 2 scoops vanilla protein powder
- ¼ cup cacao nibs or chocolate chips
- We like to add salt for a salty sweet dessert, so add to your liking :)
- Blend all ingredients together besides chocolate chips until smooth.
- Then mix in cacao nibs/ chocolate chips.
- Place on parchment paper or plastic wrap and roll into cookie dough!
- Store in freezer to last longer:)
