chocolate coconut hemp truffles
  • 1 cup coconut shreds
  • ¾ cup hemp protein powder
  • 1 tbsp flax seeds
  • 3¬†tbsps coconut oil
  • 2 tbsps maple syrup (or lakanto sweetener to make it keto)
  • ¼ cup enjoy chocolate chips melted
  1. Process coconut shreds and hemp powder until a fine powder that is beginning to slightly stick together. Then add the coconut oil, maple syrup, and flax and blend again. Adding the flax after the initial blend allows it to remain a whole seed
  2. which adds texture.
  3. Next, shape your batter into balls!
  4. Once the batter is shaped into balls, melt your dark chocolate in the microwave or in a double broiler. We used enjoy life because they are an allergen friendly chocolate.
  5. Now you can pour the chocolate over the balls! You may need to add a tsp of coconut oil to the melted chocolate to create a runnier texture that is easier to work with.
