Are you ready for fall? Cooler weather and changing leaves are right around the corner, in fact, fall is here! One of my favorite foods to eat in fall is kitchiri. It is grounding, nourishing, and contains warming spices that keep you feeling all the fall feels!
What is Kitchiri?
Kitchari actually means mixture, usually of two grains. The traditional kitchari that I have been exposed to is from traditional ayurveda. It is typically comprised of yellow split peas and basmati rice, but in this recipe I sub the rice for cauliflower. As an ayurvedic food, it is considered a stable of ayurvedic diet, balancing the doshas. It is considered to be extremely healing, easy to digest, and full of nutrients. Plus, It’s a one pot meal, which make it quick to throw together and super easy to make!Ghee is a staple when making kitchiri, so I teamed up with 4th & Heart to make a Cauliflower Kitchiri recipe. This recipe is great for those of you following paleo, ketogenic, low carb, gluten free, and dairy free diets!

If you’re not familiar with ghee, it is my favorite fat to cook with! It’s basically butter, upgraded. Ghee is clarified butter, which means it is free of lactose and dairy, making it a great swap for butter for people that don’t do well with dairy. Plus, it has an insanely amazing flavor and added health benefits. Ghee is a grounding, warming, and has a high smoke point, making it great for cooking.

I love 4th & Heart ghee because it tastes amazing and is extremely high quality. Plus it has non-GMO, Paleo, Gluten Free, and Keto certifications. Cauliflower Kitchiri with 4th & Heart Ghee!

Ingredients
1 head cauliflower, riced (or 1 bag of frozen riced cauliflower)
1/2 cup yellow split peas
2 cups water or chicken broth
2 cups dandelion greens (or another green), chopped
2 T dried wakame (adds in minerals, but not necessary)
2 T 4th & Heart original Ghee
2 t turmeric
1 t fresh ginger
1 t cumin
1/2 t cinnamon
1/4 t cardamom
1/2 t mineral salt
sprinkle of black pepper
Instructions
In a large pot, heat the 4th & Heart original ghee, then add in spices and cauliflower.
Cook for 3-5 minutes.
Next, add in remaining ingredients. Cover and simmer for 20 minutes.
Top with avocado, cilantro, coconut cream, and sesame seeds or sunflower seeds!
