Who doesn’t love popsicles on a warm summer day…oh wait, it’s not summer anymore, but the hot days aren’t quite behind us yet! This is a super simple recipe that can be prepared in 5 minutes, so you can have popsicles at the ready in your freezer!
This recipe utilizes cashews, which are full of healthy fats and add a creamy and naturally sweet taste to the popsicle while allowing it to be vegan, gluten free, and soy free! We utilized figs because they are in the peak of their season right now, making them absolutely delicious and quite abundant!
Ingredients:
- 3/4 cup cashews
- 2 tbsp maple syrup
- 1 cups water
- 4 figs
Directions:
- Blend cashews in water
- cut figs in quarters and place in popsicle molds
- Pour cashew milk over fruit
- Freeze popsicles and pop out!
These are a perfect healthy dessert or you can even eat them for breakfast like we do sometimes! They are full of beneficial fats, fiber, minerals, and nutrients, so you can feel good about giving them to your kids or eating them yourself!
