Halloween week continues with healthy almond joys! It kind of amazes me how unhealthily they make these considering all of the potentially healthful ingredients they feature…almonds, coconut, and yes, I even consider chocolate potentially healthy!
Unfortunately the candy that you buy in stores is loaded with sugar and other chemical, unnecessary ingredients, so we decided to clean it up and give you delicious, healthy almond joys that not only make your mouth joyful, they make your body joyful as well!
Almond joys have an especially special place in my heart because they are my mom’s favorite candy. She would buy these and bite out the almond and a little chocolate so she didn’t get all of the sugar. Well, now she can have some guilt free almond joys that allow her to consume the entire thing!
Coconut Filling Ingredients:
- 1/2 cup coconut
- 1/4 cup almond flour
- 1 tbsp coconut oil melted
- 1/2 tbsp grade B maple syrup
- 1/4 tsp almond extract
- 1 pinch himalayan pink sea salt
- Other Ingredients:
- melted chocolate (enjoy life for allergens/vegan or lilly’s dark chocolate…or make the raw vegan chocolate base)
- almonds
Instructions:
- Mix all coconut filling ingredients together
- form into desired shape (we chose oval-because that’s how almond joys are traditionally shaped, duh)
- place an almond in the center and press down
- Pour melted chocolate over the top, freeze, and enjoy!
