Looking for the most delicious sauce, dressing, dip, etc? Look no further than this AIP Pesto! Not only is it easy to make because it contains super simple ingredients you may have in your refrigerator right now… it also contains no allergens, so yay!
This has seriously become my go-to for pretty much everything because it adds so much flavor and nutrient density! In the recipe below, I use parsley, which is extremely detoxifying and packed with vitamins and minerals. You can also use other herbs such as cilantro, basil, and even arugula… or do a mix!
Not only are herbs a powerful ingredients, but it also contains immune-boosting and heart health garlic, anchovies, and olive oil! Olive oil is considered a heart-healthy fat because it contains monounsaturated fatty acids and is helpful in balancing blood sugar! Just make sure to purchase high quality olive oil. I love this olive oil because it is extremely fresh and honestly the best I have ever had. You want to look for cold-pressed olive oils that are in dark jars to avoid oxidation. Plus, store the olive oil in a dark and cool place to keep it fresher longer!
Okay, let’s get to the recipe so you can slather this AIP Pesto on everything this summer! You could definitely use it as a sauce for fish, a perfect addition to your burger, grilled chicken, or just about anything you can dream of! As you can see, I’ve even used it as a pizza sauce on some cauliflower crust pizza!
- 1½ cups parsley
- 2 large garlic cloves
- ½ cup olive oil
- himalayan pink sea salt to taste
- Optional: 1 anchovy (or just add extra salt)
- Blend all ingredients together and enjoy!
