This is a super nutrient dense treat that you can feel good about consuming. A lovely lady in my holistic nutrition class shared this recipe with us and I just had to share it with you all because it is absolutely delicious! The bulk ingredient in this recipe is adzuki beans, so these muffins are loaded with fiber and nutrients, plus they are moist and delicious!

Adzuki beans are slightly sweet and nutty and play an important role in Chinese medicine. Adzuki beans are said to support kidney, bladder and reproductive function. They are considered to be the most ‘yang,’ or warming of all beans. Plus they are a nutrient powerhouse that is low in fat, contains a significant amount of dietary fiber, potassium, folate, and manganese. Plus, they form a complete protein when combined with other foods, such as the coconut and cacao in this recipe.
Coconut contains significant amounts of fat, but it’s the health promoting fats, medium chain saturated fats. These fats are known for their antiviral and antibacterial properties and even their metabolism boosting ability. Coconut is a great source of manganese, molybdenum, selenium, and zinc.
Cocoa is rich in flavanoid antioxidants, which can protect agains damage to the lining of the arteries and prevent blood clots as well as keep your cholesterol low. For maximum health benefits, buy unsweetened, non-alkalized, cocoa or cacao, the more bitter the better!
Avocados provide nearly 20 essential nutrients, including fiber, potassium, copper, vitamins E and K, B-vitamins and folic acid. Because of the good types of fats found in the flesh, the term anti-inflammatory truly applies to this delicious food. Plus, avocados are actually a complete protein!
Ingredients:
- 1/2 cup dried adzuki beans
- 2 large pasture raised eggs
- 1/4 cup coconut sugar
- 1 tsp molasses
- 2 tbsps coconut oil
- 1/2 cup raw cacao powder
- 1 tbsp baking powder
Directions:
- Soak adzuki beans overnight
- In the morning, drain and rinse the beans, then cook for about 90 minutes.
- Tip: Adding seaweed to the cooking water decreases cooking time and decreases flatulence.
- Preheat the oven to 350
- Puree adzuki beans.
- Beat eggs, sugar, and molasses until creamy.
- Add the oil and bean puree to the egg mixture.
- Fold in the cacao and baking powder.
- Bake for 15 minutes and then let cool
Ingredients (Icing):
- 1 large avocado
- 3 tbsps coconut butter
- 2 tbsps coconut sugar
- 1 squirt of lime juice
- pinch sea salt
Directions (Icing):
- Blend all ingredients
- Pipe onto muffins:)
