First, let’s talk about why I love Chaga SO MUCH! It is probably one of my all time favorite medicinal mushrooms and I feel like it works well for most people.

Chaga has been used by many as an alternative to coffee because its adaptogenic properties help energize you without the caffeine. It is also rich in natural antioxidant and anti-inflammatory phenols. There are studies that show it may benefit immune function, stabilize blood sugar, reduce inflammation/pain, and be anti-aging!

Chaga can be prepared as a tea, added to coffee to reduce jitters, or in powdered form , it can be added to just about anything… like these Peanut Butter and Jelly cups!
These were super fun and easy to make and are a blood sugar balancing snack that will keep you full and energized. They are loaded with fat, fiber, and beneficial carbohydrates from berries!

I had such a great time making these with Om Mushrooms and tried creating them a few different ways. The easiest way is to use peanut butter and a store bought jelly, but I enjoyed making these with walnut butter and chia seed jam as well.
I like to make my recipes as fluid as possible so that you can adapt them to your taste buds and enjoy feeling creative! Now, let’s get to the recipe so you can enjoy these delicious cups ASAP!

‘Peanut Butter & Jelly’ Cups with Om Mushrooms

Ingredients
1/2 cup walnut butter (you can use a food processor or blender to make OR just sub peanut butter.)
1/4 cup ground flax seed (great for the first half of your cycle if you are accustomed to seed cycling.)
1 T coconut oil
4 tsp Om Mushroom Chaga
large pinch sea salt
optional: 1 tsp honey
Chia seed jam OR store bought jam to make it easier (Chia seeds are loaded with fiber and this is a low sugar way to make jam!)
Instructions
Combine all ingredients except for the chia seed jam until creamy.
Place 1-2 T of ‘peanut butter’ mixture into a silicone muffin pan (I LOVE my silicone muffin pans, it makes it SO much easier.
Next, top with chia seed jam and place in the freezer.
Once the jam has set, add your ‘peanut butter’ mixture on top.
These can be stored in the refrigerator or freezer!
