These sliders are so light, yet filling at the same time. I loved being able to use mostly local ingredients to create these and enjoy the simplicity of making them. Using sweet potatoes as buns allows these to be packed with less carbohydrates, more vitamins, and minerals, and a fresher taste.
I have recently been taking my paleo lifestyle a little further to see how I feel. I have been following an AIP paleo diet, or autoimmune protocol diet. While I do not have an autoimmune disease, I am working on allowing my body to heal to the most optimal health through some different avenues, so the less stress I can put on my body food wise, the better. I began breaking out a bit on my face, so I decided that for now, I may need to scale back my diet even more to allow my body to come back into balance. Everyone is different and our bodies go through phases and this feels good to me at the moment!
If you do embark on any type of dietary changes, never think of it as a restriction or diet, but a way for you to explore new foods! Even though I have taken many foods out of my diet, it is allowing me to see food in a different and more creative light. And honestly, foods in their true state are so beautiful, nourishing, and delicious that I don’t find this to be difficult. Plus it allows me to appreciate these foods in a different way. So, whether or not you are choosing to eat a diet similar to a paleo diet, have embarked on your AIP journey, or just love all foods, you are sure to enjoy some of these recipes!
- Bison (grass-fed)
- Sweet Potatoes (look for some fatter ones for bigger “buns”
- AIP mayo, or other mayo
- Preheat oven to 400.
- Cut sweet potatoes into 1/4 inch rounds.
- Bake sweet potatoes in a shallow pan with a little water covering the bottom. Bake until soft, but not mushy (about 30 minutes).
- Mix some himalayan sea salt in with your bison and form into small patties.
- Cook patties in a skillet on the stove to desired temperature
- Assemble your sliders with whatever you wish! My layers were sweet potato, AIP mayo (recipe below), bison, avocado, romaine, and sweet potato and they were SO good.
- 1/2 cup coconut butter
- 1/4 cup lemon juice
- 1/2 cup hot water
- 1/4 cup olive oil
- 5 garlic cloves
- salt to taste
