1 cup GF old fashioned oats
1/2 cup brown rice flour
1/2 cup walnuts
1/3 cup coconut flour
1/4 cup flax seeds
2 tsp cinnamon
1 tsp ginger powder
1 tsp cardamom
1 tsp salt
1 tsp baking powder
1 tsp baking soda
2 medium sized apples, chopped
1 orange (juice and zest)
2/3 cup walnuts
1/2 cup dried cranberries
*If you like a sweeter bread, add in 1/2 cup coconut sugar.
Preheat oven to 375 degrees.
Place all ingredients into a blender (except for 2/3 cup walnuts and 1/2 cup dried cranberries)and blend until smooth!
Stir in chopped walnuts and cranberries.
Optional: top with walnuts, oats, 1 T maple syrup, and sea salt.
Bake at 375 degrees for 45 minutes, or until a toothpick comes out smoothly.
Alternatively, you can blend dry ingredients together, place in a bowl.
Then blend wet ingredients together and fold into the dry ingredients.
