Paleo and AIP chili with Ayurvedic Spices
- 1 pound grass-fed, ground beef
- 4 cups pumpkin puree
- 4 cups broth (homemade or pacifica brand)
- 2 cups riced cauliflower
- 2 cups kale, finely chopped (or spinach)
- 2 cups peas
- 1 cup zucchini, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp ghee
- 1 tbsp wakame seaweed
- 1.5 tbsp turmeric
- 1.5 tbsp cumin
- 1.5 tbsp cinnamon
- 1 tbsp fennel seeds
- 1 tsp ginger
- 1 tsp black pepper
- ½ tsp nutmeg
- ½ tsp cardamom
- Sautee onions and garlic in ghee.
- Next, add in ground beef and brown.
- In a crock pot, mix all of the remaining ingredients.
- Once beef is browned, add it to the crockpot with the rest of the mixture.
- Allow this to cook on low for a few hours, or use the chili setting on your instant pot for a quick meal!
