Banana Chocolate Chip Cacao Blondies
  • ⅓ cup cassava flour
  • ⅓ cup vanilla pea protein powder
  • 2 tbsp arrowroot starch
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 tbsp cinnamon
  • 2 tbsps chia seeds
  • 3 tbsps cacao nibs
  • 2 tbsps enjoy life mini chocolate chips
  • ¼ cup coconut oil (melted)
  • 1-2 bananas (10-11 oz or 230 grams)
  1. Preheat oven to 325
  2. Mix all dry ingredients together.
  3. Mash banana (or blend if that's easier)
  4. Then, add your mashed banana and coconut oil to the dry ingredients and mix!
  5. Spread it out evenly on a baking sheet, about an inch thick.
  6. 'Grease' the pan with coconut oil or place a piece of parchment paper underneath.
  7. Bake it at 325 for 15-20 minutes and enjoy!
You can sub the cassava flour for garbanzo bean flour and add collagen protein instead of the vanilla protein...get creative trying things out!
